Tomato & Avocado Salsa

I’m a condiments junky. There. I said it. Sour cream, cheese, salsa, guacamole. If you can slather it on a tortilla, I’ll take two.

Of course, that doesn’t really lend itself to the whole “New Year, New Body” resolution thing I’ve got going.

Then again, neither does the bag of Reese Minis that are hidden in the back of the freezer…

But, the way I see it, if I can eat fewer condiments on my tacos – I can eat more Reese Minis afterwards! Which is why I’m in love with this salsa:

The avocado lends just the right amount of creaminess to stand in for sour cream AND guac, and with all those veggies in it, it can’t help but be healthy. Even if you take an extra helping. Or Two.

Tomato & Avocado Salsa

Ingredients
  • 1 large Tomato, diced
  • 1 Avocado, diced
  • 1 Jalapeno Pepper, finely chopped
  • ¼ Red Onion, coarsely chopped
  • 1 Lime
  • ¼ fresh Cilantro, finely chopped
  • Coarse Sea Salt
  • Fresh Ground Black Pepper
  • Cayenne Pepper
Instructions
  1. In a medium-sized bowl, combine the tomato, avocado, pepper, and onion.
  2. Squeeze the juice from the lime over top, and stir in the cilantro.
  3. Season to taste using the salt, pepper, and a dash of cayenne.
  4. Mix thoroughly & serve on tacos, with chips, or hidden in your toddler's quesadilla
Notes
Toss the avocado pit back into the bowl to store over-night. Otherwise you're going to have a hard time convincing your MIL that the avocado in it really is safe to eat...
